"Running totally changed my life and now I hope to inspire others if I can."

Tanya has been an inspiration to me for years.

She has always shown an incredible resolve in her life. Knowing exactly what she wants and never being afraid to go out and ask for it. She has managed to carve out a successful career for herself not only because of her enormous talent but also through her sheer will and resilience. 

Just over a year ago she decided to enter the London Marathon having never really run before. This year she's doing it again. 

Always willing to push herself. We chat about how her lockdown is going and how she is managing to keep sane. 

With her new found love of inventive recipes and writing she has discovered that positivity is now her driving force. 

"I'm aware I'm losing cherished moments... but I know so many families are going through that."

Tanya Franks’ Broccoli Soup recipe

Heat a chopped white onion or shallot, garlic, and ginger until soft.
Add the broccoli with hot water and bring to the boil, then simmer till soft
Add half a tin of coconut milk
Add vegetable stock
Seasonings, pepper, oregano, basil, etc
(I also added a little pea protein one time too, which is a nice addition)
Heat through.
Take off the heat, add about a third of a lime sliced (without the skin)
Blend to smooth
Cook some rice or pasta. Put it into a bowl and pour the soup over.
Sprinkle a little blue Stilton in the bowls if you fancy.
